Ingredients
- 3/4 cup butter
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1 tsp vanilla
- 1 egg
- 2 cups flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 pinch nutmeg
- 1 cup apples
- 1/3 cup sugar
- 1 tsp ground cinnamon
Steps
- Heat the oven to 350 F and line two baking sheets with parchment.
- Beat butter, brown sugar, and sugar in a large bowl, then mix in vanilla and egg.
- Whisk flour, pudding mix, baking soda, cinnamon, salt, and nutmeg in another bowl.
- Stir the dry mixture into the butter mixture, then fold in apples and white chocolate chips if using.
- Mix the remaining sugar and cinnamon in a small bowl, roll the dough into 24 portions, and coat each one.
- Bake the cookies for 10 to 12 minutes, then cool them on the sheets.
