Ingredients
- 1 1/2 sleeves saltine crackers
- 1/2 cup unsalted butter
- 3 tbsp sugar
- 1 can (14 oz) sweetened condensed milk
- 4 large egg yolks
- 1/2 cup fresh lemon juice
- 1 pinch salt
- 1 1/2 cups heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 lemon
- 1 sprinkle of flaky sea salt
Steps
- Heat the oven to 350 F and crush the crackers with the sugar in a bowl.
- Mix in the melted butter, press the crumbs into a 9-inch pie pan, and bake for 15 minutes.
- Whisk the condensed milk, egg yolks, lemon juice, and salt, then pour the filling into the warm crust.
- Bake the pie for 15 minutes, then chill it for 4 hours.
- Whip the cream, powdered sugar, and vanilla until soft peaks form, then spread it over the chilled pie.
- Top the pie with lemon zest and flaky sea salt.
