Ingredients
- 8 Tortillas
- 8 oz Cheddar and shredded cheese
- 15 oz Canned beans (black beans, drained)
- 8 oz Canned corn and vegetables (corn)
- 8 oz Salsa
- 4 oz Sour cream or plain yogurt
From the pantry: Olive and cooking oil.
Steps
- Mash the beans slightly and mix with the corn.
- Spread cheese and filling on half of each tortilla and fold.
- Cook in an oiled skillet 2 to 3 minutes per side until crisp and melted.
- Serve with salsa and sour cream.
