Ingredients
- 2 cups rotisserie chicken
- 1/2 cup salsa
- 1 cup half and half
- 1 tsp cornstarch
- 2 cups freshly grated medium cheddar cheese
- optional 1 teaspoon hot sauce
- 8 cups corn tortilla chips
- 1 cup shredded cheddar cheese or mexican blend cheese
Steps
- Heat the oven to 400 F and spread the tortilla chips over a large baking sheet.
- Stir the chicken and salsa together, then scatter the mixture over the chips.
- Sprinkle the shredded cheddar over the chicken and bake for 8 minutes.
- Whisk the half-and-half and cornstarch in a small saucepan over medium heat for 3 minutes.
- Stir in the grated cheddar and hot sauce, if using, until melted and smooth.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Drizzle the cheese sauce over the hot nachos and serve.
