Ingredients
- 2/3 cup vegetable or canola oil
- 2 large eggs
- 1 1/2 tbsp lemon zest
- 1/4 cup fresh lemon juice
- 1 cup plain yoghurt
- 1 1/4 cups caster sugar
- 2 cups plain flour
- 4 tsp baking powder
- 1 pinch salt
- 1 3/4 cup icing sugar
- 1 tbsp lemon juice
- 1 1/2 tbsp plain yogurt
Steps
- Heat the oven to 350 F and grease a 9-inch round cake pan with oil.
- Whisk the oil, eggs, lemon zest, lemon juice, yogurt, and caster sugar in a large bowl.
- Stir in the flour, baking powder, and salt until just combined.
- Pour the batter into the pan and bake for 45 to 50 minutes, until a toothpick comes out clean.
- Cool the cake in the pan for 15 minutes, then transfer it to a plate.
- Whisk the icing sugar, lemon juice, and yogurt together, then spread the glaze over the cooled cake.
