Ingredients
- 450 g plain flour
- 225 ml water
- 450 g lamb
- 1 green chilli
- 450 g onions
- 2 tblsp black pepper
- 1 tbsp vegetable oil
- 1 tbsp tomato puree
- 425 ml strained yoghurt
- 1 pinch coriander
Steps
- Mix the flour and water into a firm dough, knead it briefly, and rest it for 10 minutes.
- Chop the lamb, onions, and green chilli, then mix them with half the black pepper.
- Roll the dough thin, cut it into small squares, and fill each square with the lamb mixture before sealing the edges.
- Heat the oil and tomato puree in a small saucepan, then stir in the yoghurt and remaining black pepper over low heat.
- Arrange the dumplings in a lightly oiled covered skillet with a little water, cover, and steam for 15 minutes.
- Check that the lamb reaches 160 F, then spoon the warm yoghurt sauce over the dumplings and add coriander.
