Ingredients
- 3 large eggs
- 2 cups sugar
- 1/2 cup apple butter
- 1/2 cup canola oil
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 3 cups shredded peeled apple
- 1 cup chopped pecans
- 3/4 cup butter
- 3 cups confectioners' sugar
- cinnamon sugar (optional)
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan with cooking oil.
- Whisk the eggs, sugar, apple butter, canola oil, and vanilla in a large bowl.
- Stir in the flour, cinnamon, baking soda, and salt, then fold in the apples and pecans.
- Spread the batter in the pan and bake for 40 to 45 minutes, until the center is firm.
- Cool the cake in the pan for 15 minutes, then beat the butter and confectioners' sugar with enough water to make frosting.
- Spread the frosting over the cooled cake and sprinkle with cinnamon sugar if desired.
