Ingredients
- 12 oz from 3 medium hass avocados
- juice from 1-2 small limes
- 1/4 cup chopped sundried tomatoes
- 2/3 cup diced red onion
- 1/3 cup chopped cilantro
- 1 tsp kosher salt
- freshly ground black pepper
- 10 egg roll wrappers
- small bowl of water for sealing
- olive or canola oil spray
- 2 tbsp mayonnaise
- 1 tbsp sweet chili sauce
- 1 few dashes of sriracha (optional)
Steps
- Mash the avocados with lime juice, salt, and pepper in a bowl.
- Stir in the sun-dried tomatoes, red onion, and cilantro.
- Mix the mayonnaise, sweet chili sauce, and sriracha in a small bowl.
- Place filling across the lower third of each wrapper.
- Moisten the wrapper edges with water, fold in the sides, and roll them closed.
- Chill the rolls and sauce for 15 minutes before serving.
