- 8 slices center-cut bacon
- 1/2 cup finely diced shallots
- 5 ounce package baby spinach
- 8 oz shredded gruyère cheese
- 12 large eggs
- 1 cup nonfat milk
- 1/2 tsp kosher salt
- freshly ground black pepper (optional)
Steps
- Heat the oven to 375 F and coat a 9-by-13-inch baking dish with cooking spray.
- Cook the bacon in a large skillet over medium heat for 6 minutes until crisp.
- Add the shallots and spinach, then cook for 3 minutes until the spinach wilts.
- Whisk the eggs, milk, salt, and pepper in a large bowl.
- Spread the bacon mixture in the baking dish and sprinkle it with Gruyère.
- Pour the egg mixture over the filling and bake for 30 minutes until firm and 160 F.
