Ingredients
- 1/2 cup butter (optional)
- 2 cups all-purpose flour (optional)
- 1 tsp baking soda
- 1/4 tsp sea salt
- 3/4 cup brown sugar
- 2 eggs beaten
- 2 1/3 cups mashed overripe bananas
- thinly sliced ripe banana (optional)
- 1/4 cup granulated sugar
- 8 oz mascarpone (optional)
- 2 tbsp maple syrup (optional)
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with butter.
- Whisk the flour, baking soda, and salt in a medium bowl.
- Stir the melted butter, brown sugar, beaten eggs, and mashed bananas in a large bowl.
- Fold the dry mixture into the banana mixture until just combined.
- Pour the batter into the loaf pan and bake for 55 minutes, until the center reaches 200 F or a tester comes out clean.
- Cool the loaf in the pan for 15 minutes before slicing.
