Ingredients
- 1 lb fresh baby carrots
- 1 can (4 oz) mushroom stems and pieces
- 1 beef rump roast or bottom round roast
- 1/2 tsp garlic powder
- 1/4 tsp pepper
- 1 tbsp canola oil
- 1 jar (12 oz) beef gravy
- 1 can condensed cream of mushroom soup
- 1 cup water
- 1 envelope onion soup mix
Steps
- Place the carrots and mushroom pieces in a 6-quart slow cooker.
- Rub the roast with the garlic powder and pepper, then set it over the vegetables.
- Whisk the beef gravy, mushroom soup, water, and onion soup mix in a bowl, then pour the mixture over the roast.
- Cover and cook on low for 6 hours, until the beef reaches at least 145 F and the vegetables are tender.
- Rest the roast for 5 minutes, then slice it and spoon the gravy over each portion.
