Ingredients
- 4 large potatoes
- 1 bunch spring onions
- 100 g plain flour
- 1 egg white
- 150 ml milk
- 1 tsp bicarbonate of soda
- 3 tbsp butter
- 2 tbsp vegetable oil
- 6 cherry tomatoes
- 12 bacon
- 6 egg
Steps
- Boil two potatoes in salted water for 15 minutes, then drain and mash them.
- Grate the remaining potatoes and squeeze out excess moisture.
- Stir the grated potatoes, mashed potatoes, flour, egg white, milk, bicarbonate of soda, and salt together.
- Cook the bacon in a skillet over medium heat for 8 minutes, then keep it warm.
- Fry the potato batter in butter and oil over medium heat for 10 minutes, turning once, until browned and cooked through.
- Cook the tomatoes for 3 minutes, then fry the six eggs until their whites and yolks are firm.
