Ingredients
- 2 large yellow onion
- 1/2 tsp kosher salt (optional)
- 2 tbsp extra virgin olive oil
- 11 inch refrigerated pie crust dough
- freshly ground black pepper (optional)
- 1/2 cup grated parmesan cheese
- 2 tsp fresh thyme leaves
- 1 large egg
Steps
- Heat the oven to 400 F and line a large baking sheet.
- Slice the onions, then cook them with olive oil and salt in a large skillet over medium-low heat for 25 minutes.
- Roast the squash with olive oil and pepper on the baking sheet for 20 minutes.
- Spread the pie crust on the baking sheet and layer on the onions, squash, parmesan, and thyme, leaving a 2-inch edge.
- Fold the crust edge over the filling and brush it with beaten egg.
- Bake the galette at 400 F for 30 to 35 minutes, until the crust is golden.
