1 cauliflower head

1 cup white onions
3 cloves garlic
1 tsp cumin powder
1/4 tsp ground coriander
4 tsp curry powder
salt and black pepper to taste (optional)

2 cups green peas (optional)
1 3/4 cups coconut milk from a can

Steps

Heat the oil in a large pot over medium heat and cook the chopped onions for 4 minutes.
Add the garlic, cumin, coriander, curry powder, salt, and pepper, then cook for 1 minute.
Stir in the cauliflower and diced tomatoes with their juice.
Cover and simmer for 12 minutes, stirring occasionally, until the cauliflower is nearly tender.
Add the coconut milk and peas, then simmer uncovered for 8 minutes.
