- 1 tbsp ground flax
- 3 tbsp water
- 1/4 cup plus 1 tablespoon virgin coconut oil
- 2 tbsp natural smooth almond butter
- 3/4 cup coconut sugar
- 1 tsp pure vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp fine sea salt or pink himalayan salt
- 1 tsp cinnamon
- 3/4 cup plus 1 tablespoon oat flour
- 3/4 cup gluten-free rolled oats
- 3/4 cup almond flour
- 1/4 cup plus 1 tablespoon non-dairy mini chocolate chips
Steps
- Stir ground flax with water and let it stand for five minutes.
- Mix coconut oil, almond butter, coconut sugar, vanilla, and the flax mixture in a bowl.
- Stir in baking soda, salt, cinnamon, oat flour, rolled oats, almond flour, and chocolate chips.
- Press the mixture into a greased eight-inch square pan.
- Bake at 350 F for twenty-two minutes, then cool the bars for three minutes.
