Ingredients
- 4 cups chicken stock
- 6 tbsp butter
- 1 small yellow onion
- 1 1/2 cups arborio rice or long-grain carolina rice
- 1/2 cup white wine
- 1/2 cup freshly grated parmesan cheese
- minced italian flat leaf parsley (optional)
Steps
- Warm the chicken stock in a saucepan over low heat for 5 minutes.
- Melt 2 tablespoons butter in a large skillet, then cook the onion for 5 minutes.
- Stir in the rice for 2 minutes, add the wine, and cook for 2 minutes.
- Add the warm stock 1 cup at a time, stirring often and cooking for 20 minutes until creamy and tender.
- Stir in the remaining butter, Parmesan, and parsley, then rest for 1 minute.
