Ingredients
- 2 packages (6 oz) fresh baby spinach
- 2 tbsp water
- 2 tsp butter
- 1/2 cup heavy whipping cream
- 2 tsp grated lemon zest
- 1/2 tsp minced garlic
- 1/8 tsp crushed red pepper flakes
- 1/2 cup grated parmesan cheese
- 2/3 cup onion and garlic salad croutons
Steps
- Melt the butter in a large skillet over medium heat.
- Add the spinach and water, cover, and cook for 3 to 4 minutes until wilted.
- Stir in the cream, lemon zest, garlic, and red pepper flakes.
- Simmer uncovered for 5 minutes until the cream slightly thickens.
- Stir in the Parmesan, then top with the croutons and cook for 1 minute.
