Ingredients
- 1 tbsp olive oil
- 1 small onion
- 4 whole scallions
- 1/2 cup green bell pepper
- 4 1/2 cloves garlic
- 1 tsp cumin
- 1/2 tsp each: dried oregano and ground coriander
- 1/8 tsp smoked paprika
- 2 cans (15 oz) black beans
- 1 cup filtered water
- 2 small dried bay leaves
- 2 1/2 tbsp fresh cilantro
- to taste salt & pepper (optional)
Steps
- Heat the olive oil in a large saucepan over medium heat.
- Cook the onion, scallions, jalapeno, and green pepper for 6 minutes.
- Stir in the garlic, cumin, oregano, coriander, and smoked paprika for 1 minute.
- Add the black beans, water, bay leaves, salt, and pepper.
- Simmer uncovered for 20 minutes, stirring occasionally.
- Remove the bay leaves and stir in the cilantro, vinegar, and brown sugar if using.
