Ingredients
- 2 tbsp extra-virgin olive oil
- 10 oz frozen lima beans
- 3 cups fresh
- 1 bunch green onions
- 1 pint cherry tomatoes
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh basil leaves
- 4 tbsp fresh lime juice
- sea salt (optional)
- freshly cracked black pepper (optional)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the lima beans and 3 cups fresh, then cook for 8 minutes, stirring occasionally.
- Stir in the green onions and cherry tomatoes, then cook for 5 minutes.
- Fold in the cilantro and basil, then cook for 1 minute.
- Stir in the lime juice, salt, and pepper, then remove the skillet from the heat.
