Ingredients
- 1 tsp oil
- 2 slices bacon
- 2 cloves garlic
- 400 g /14oz can creamed corn
- 400 g /14oz can corn kernels
- 1 2/3 cups chicken stock
- 3/4 cup milk
- 1 potato
- 1/2 tsp each salt and pepper
- 1 green onion
- 1/2 cup milk
- 1 1/2 tbsp cornflour / corn starch
Steps
- Dice the potato into 1/4-inch pieces and chop the bacon and garlic.
- Heat the oil in a medium saucepan over medium heat, then cook the bacon for 3 minutes.
- Add the garlic, potato, creamed corn, corn kernels, and chicken stock, then simmer for 7 minutes.
- Stir in 3/4 cup milk, salt, and pepper, and simmer for 2 minutes.
- Whisk the remaining 1/2 cup milk with the cornflour, stir it into the soup, and cook for 2 minutes.
- Top the chowder with sliced green onion and serve hot.
