Hot Crab Corn Dip

Crab, corn, peppers, scallions, and creamy seasonings bake together into a warm dip with a crisp cracker topping.

Ingredients

  • olive oil spray
  • 1/2 cup scallions
  • 1/2 cup bell pepper
  • 2 cups corn kernels
  • 1/4 tsp kosher salt
  • 2 tsp old bay
  • 1/4 cup light mayo
  • 1/2 cup nonfat greek yogurt
  • 2 tbsp lemon juice
  • 1/4 cup butter crackers (optional)

Steps

  1. Heat the oven to 375 F and lightly coat a 9-inch baking dish with olive oil spray.
  2. Cook the scallions, bell pepper, and corn in a skillet over medium heat for 5 minutes.
  3. Stir the vegetables with salt, Old Bay, crab, mayonnaise, yogurt, and lemon juice.
  4. Spread the mixture in the baking dish and top with crushed butter crackers if using.
  5. Bake for 20 minutes, until hot throughout and lightly browned on top.
