Ingredients

2/3 lb ground beef
1 1/2 cups spinach
3/4 cup jasmine rice
7 cups cold water
1 stalk green onion
1/3 tsp fine sea salt
1/4 tsp sesame oil
1/3 tsp ground white pepper

Steps

Rinse the rice under cold water and drain it.
Set a 6-quart pressure cooker to sauté, cook the beef for 8 minutes until it reaches 160 F, and drain excess fat if needed.
Add the rice, water, salt, sesame oil, and white pepper, then scrape the pot bottom clean.
Lock the lid and cook on high pressure for 30 minutes.
Let the pressure release naturally for 15 minutes, then carefully release any remaining pressure.
Stir in the spinach and green onion, and let the congee stand for 5 minutes before serving.
