Ingredients
- 1 1/2 tbsp olive oil
- 2 cloves garlic
- 1/2 small white onion
- 1 cup long grain white rice
- 1 3/4 cups chicken or vegetable broth
- 2 1/2 tbsp tomato paste
- 1/4 tsp salt
- 1 serrano or jalapeno pepper (optional)
- 1 sprig coriander / cilantro
- finely chopped coriander / cilantro leaves
Steps
- Heat the oil in a 3-quart saucepan over medium heat and cook the onion for 2 minutes.
- Add the garlic and rice, then stir for 2 minutes.
- Mix in the broth, tomato paste, salt, and pepper, then bring the mixture to a boil.
- Cover the saucepan, reduce the heat to low, and simmer for 11 minutes.
- Remove the pan from the heat, rest it covered for 1 minute, and stir in the cilantro leaves.
