- 2 cups all-purpose flour
- 2 tbsp sugar
- 4 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2 cups 2% milk
- 2 large eggs
- 1/4 cup canola oil
- 1 can peach halves
- 1 cup corn syrup
- 1/2 cup sugar
- 1/3 cup butter
- 1 large egg
- 2 1/2 tsp vanilla extract
Steps
- Whisk the flour, sugar, baking powder, cinnamon, and salt in a bowl.
- Whisk in the milk, two eggs, and canola oil until just combined.
- Simmer the peach halves, corn syrup, sugar, butter, and vanilla in a saucepan for 5 minutes.
- Heat a lightly oiled skillet over medium heat and pour in 1/4-cup portions of batter.
- Cook each pancake for 2 to 3 minutes per side, until golden and cooked through.
- Serve the pancakes with the warm peaches and sauce.
