Ingredients
- 1 lb penne
- 3/4 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 cup tomato paste
- 1 shallot
- 4 cloves garlic
- 3 tbsp vodka
- 2 tbsp butter or olive oil
- 1/2 tsp crushed red pepper flakes
- 3 1/2 chopped fresh basil leaves (optional)
Steps
- Bring a large pot of salted water to a boil, cook the penne until tender, and reserve 1 cup cooking water.
- Heat the butter or oil in a large skillet over medium heat, add the minced shallot, and cook for 3 minutes.
- Add the garlic and red pepper flakes, then cook for 1 minute.
- Stir in the tomato paste and vodka, and cook for 3 minutes.
- Add the cream and simmer for 3 minutes.
- Drain the pasta, toss it with the sauce and Parmesan, and add cooking water as needed.
- Stir in the basil and season with salt and pepper.
