- 2 cups old-fashioned oats
- 1 tbsp pumpkin pie spice
- 1 tsp baking powder
- heaping 1/4 tsp fine sea salt
- 1 cup pumpkin puree
- 1 cup unsweetened soy milk of choice
- 1/4 cup pure maple syrup
- 1/4 cup almond butter or peanut butter
- 1 tsp vanilla extract
- 2 large eggs
- 1/3 cup chocolate chips
Steps
- Heat the oven to 350 F and grease an 8-inch square baking pan with cooking oil.
- Stir the oats, pumpkin pie spice, baking powder, salt, and chocolate chips in a large bowl.
- Whisk the pumpkin, soy milk, maple syrup, nut butter, vanilla, and eggs in another bowl.
- Pour the wet mixture into the oats and stir until evenly combined.
- Spread the mixture in the pan and bake for 30 to 35 minutes, until set in the center.
- Cool the oatmeal for 5 minutes before cutting.
