Ingredients
- 150 ml / 5 oz egg whites
- 1 cup caster sugar
- 1 tbsp cornflour / cornstarch
- 1 tsp white vinegar
- 1 1/2 cups thickened cream / heavy cream
- 1/4 cup caster sugar
- 1 tsp vanilla extract or essence
- fruit of choice. i used: raspberries
Steps
- Heat the oven to 250 F and line a baking sheet with baking paper.
- Beat the egg whites in a clean bowl until soft peaks form, then gradually beat in the caster sugar until glossy and stiff.
- Fold in the cornstarch and vinegar, spread the meringue into a 9-inch round, and make a shallow dip in the center.
- Bake the meringue for 75 minutes, then turn off the oven and let it cool inside for 15 minutes.
- Beat the cream, remaining caster sugar, and vanilla until soft peaks form.
- Top the cooled meringue with the whipped cream and raspberries.
