Ingredients
- 3 cups spinach
- 1/2 cup blueberries
- 1/2 cup strawberries
- 1/2 cup pineapple chunks
- 1/4 cup walnuts
- red onion
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- salt and pepper (optional)
Steps
- Wash and dry the spinach, blueberries, strawberries, and pineapple.
- Slice the strawberries and thinly slice the red onion.
- Combine the spinach, fruit, onion, and walnuts in a medium bowl.
- Whisk the olive oil, lemon juice, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss for 1 minute.
