- 28 oz can whole tomatoes
- 3 cloves garlic
- 1 tsp kosher salt
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 3 ears sweet corn
- 2 tbsp olive oil
- 2 cloves garlic

- 24 corn tortillas
- cayenne lime mayo
- crumbled cotija cheese

Steps
- Blend or crush the tomatoes, three garlic cloves, salt, oregano, cumin, and cinnamon into a chunky sauce.
- Simmer the tomato sauce in a medium saucepan over medium heat for 15 minutes.
- Cut the corn from the cobs and sauté it with olive oil, two garlic cloves, cumin, and oregano for 8 minutes.
- Warm the tortillas in a dry skillet over medium heat for 1 minute per side.
- Spread each tortilla with tomato sauce and top it with corn, cayenne lime mayo, and cotija cheese.
- Serve the garnaches with lime wedges.
