Ingredients
- 2 sweet potatoes
- 1 tbsp olive oil
- 1 small onion
- 1 tbsp butter
- 1 1/2 cups diced ham
- 1 bell pepper
- 4 large eggs
- salt and pepper to taste (optional)
- chopped fresh parsley (optional)
Steps
- Peel and dice the sweet potatoes and chop the onion and bell pepper.
- Heat the oil and butter in a large skillet over medium heat, then cook the sweet potatoes with 2 tablespoons water for 15 minutes.
- Add the onion and bell pepper, then cook for 6 minutes until tender.
- Stir in the ham and cook for 4 minutes until hot.
- Make four spaces in the hash, crack in the eggs, cover the skillet, and cook for 8 to 10 minutes until the eggs are firm.
- Season the hash with salt and pepper, then top it with parsley.
