Ingredients
- 50 g tahini
- 1 lemon
- 2 tblsp olive oil
- 1 chopped red onions
- 1 clove peeled crushed garlic
- 1 thinly sliced yellow pepper
- 200 g green beans
- 1 sliced courgettes
- 100 g shredded kale
- 250 g pack lentils
Steps
- Whisk the tahini, lemon juice, two tablespoons olive oil, salt, pepper, and two tablespoons water in a small bowl.
- Heat the remaining oil in a large skillet over medium heat.
- Cook the onion, garlic, yellow pepper, green beans, and courgette for 8 minutes.
- Stir in the kale and cook for 3 minutes until wilted.
- Add the lentils and cook for 5 minutes until hot.
- Stir in the tahini sauce and cook for 2 minutes over low heat.
