Ingredients
- 500 g / 1 lb spaghetti
- 2 tsp cooking salt / kosher salt
- 1/2 cup extra virgin olive oil
- 6 large garlic cloves
- 1/2 tsp red chilli flakes (optional)
- 1 tsp cooking salt / kosher salt
- 1/3 cup finely chopped parsley
- 1/2 cup reserved pasta cooking water
- parmesan or parmigiano reggiano (optional)
Steps
- Boil a large pot of water, add 2 teaspoons salt, and cook the spaghetti for 9 minutes or until tender.
- Heat the olive oil in a large skillet over low heat and cook the sliced garlic and chili flakes for 3 minutes without browning the garlic.
- Reserve 1/2 cup pasta water, drain the spaghetti, and add it to the skillet.
- Toss the pasta with the reserved water, remaining salt, parsley, and Parmesan if using, then cook for 1 minute.
