Ingredients
- 3/4 cup panko bread crumbs
- 1 tsp coriander
- 1 tsp cumin
- 1 tsp sea salt
- 1/2 cup all-purpose flour
- 2 large eggs
- 2 large avocados
- extra-virgin olive oil (optional)
- chipotle ranch or desired dipping sauce (optional)
Steps
- Heat the oven to 425 F and line a baking sheet with parchment.
- Mix the panko, coriander, cumin, and salt in a shallow bowl.
- Place the flour in a second bowl and beat the eggs in a third bowl.
- Cut the avocados into thick slices, then coat each slice in flour, egg, and panko.
- Arrange the slices on the baking sheet, brush with oil if desired, and bake for 10 minutes.
- Turn the slices and bake for 8 to 10 minutes more, until crisp.
