Ingredients

  • 2 overripe bananas
  • 1/2 cup avocado oil
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1/2 tbsp pure vanilla extract
  • 1 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 1/2 tbsp light brown sugar
  • 1 tbsp all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt
  • 1/2 tbsp unsalted butter

Steps

  1. Preheat the oven to 375 F and oil eight muffin cups.
  2. Mix the brown sugar, flour, cinnamon, salt, and butter in a small bowl for the streusel.
  3. Mash the bananas in a medium bowl, then stir in the avocado oil, sugars, egg, and vanilla.
  4. Stir the flour, baking powder, baking soda, cinnamon, and salt into the banana mixture until just combined.
  5. Divide the batter among the muffin cups and sprinkle the streusel over each one.
  6. Bake for 18 to 20 minutes, until the muffins are set in the center.
