Ingredients
- 3 lb yukon gold potatoes
- 1/2 lb bacon
- 1 small red onion
- 1/2 cup white vinegar
- 1/2 cup beef broth
- 1 tbsp prepared yellow mustard
- 1 tbsp sugar
- 1/2 tsp salt
- 2 tbsp fresh parsley (optional)
Steps
- Cut the potatoes into chunks and boil them in salted water for 15 minutes, until tender.
- Cook the bacon in a large skillet over medium heat for 8 minutes, then remove it.
- Cook the onion in the bacon fat for 3 minutes, until softened.
- Whisk the vinegar, beef broth, mustard, sugar, and salt in the skillet.
- Drain the potatoes and add them to the skillet.
- Toss the potatoes with the dressing and bacon, then stir in the parsley.
