Ingredients

  • 1/2 sweet onion
  • 1 1/2 lb pickling cucumbers
  • 2 1/2 cloves garlic (optional)
  • 1 tbsp mustard seeds
  • 1 tbsp mixed whole peppercorns
  • 1/2 tsp celery seed
  • 1 1/2 cups distilled white vinegar
  • 3/4 cup raw apple cider vinegar
  • 1/2 cup distilled water
  • 1 tsp turmeric
  • 1 cup granulated sugar
  • 1 1/2 tbsp kosher salt

Steps

  1. Slice the cucumbers and onion thinly, and place them in a heatproof bowl.
  2. Combine the vinegars, water, sugar, salt, turmeric, mustard seeds, peppercorns, and celery seed in a saucepan.
  3. Bring the brine to a boil over medium heat, stirring until the sugar dissolves, for 3 minutes.
  4. Pour the hot brine over the vegetables and let them stand for 10 minutes.
  5. Cool the pickles before serving or refrigerating them.
