Ingredients
- 2 lb chicken breast
- 1 cup italian-style breadcrumbs
- 3/4 cup mayonnaise
- 1 tsp mrs dash
- 1 tsp fine sea salt
- 1/2 tsp black pepper
- extra light olive oil
- 12 small wooden skewers
Steps
- Soak the wooden skewers in water for 30 minutes.
- Cut the chicken into 1-inch pieces and stir the mayonnaise, Mrs. Dash, salt, and pepper together.
- Coat the chicken with the mayonnaise mixture, then press each piece into the breadcrumbs.
- Thread the chicken onto the soaked skewers and brush the grill grates with olive oil.
- Heat the grill to medium-high, about 400 F, and grill the skewers for 5 to 6 minutes per side.
- Turn the skewers as needed and cook for about 12 minutes total, until the chicken reaches 165 F.
