- 2 tbsp chopped green onions
- 2 tbsp diced red bell pepper

- 12 egg roll wrappers

Steps
- Heat the oven to 400 F and spray a baking sheet with olive oil spray.
- Cook the sausage in a skillet over medium heat for 6 to 8 minutes, breaking it apart until it reaches 165 F.
- Whisk the eggs, water, salt, and pepper, then scramble them in the skillet until firm.
- Stir the green onions and red bell pepper into the sausage and eggs.
- Place the filling in the wrappers, fold them closed, and set them seam-side down on the baking sheet.
- Spray the rolls lightly with oil and bake for 12 to 15 minutes, turning once, until crisp.
