12 oz broccoli florets
1 large egg
1 large egg white
1/3 cup green onions
4 oz colby jack cheese
3/4 tsp italian seasoning
1/8 tsp cayenne (optional)

2/3 cup all-purpose flour
3 large eggs
2 cups cooked quinoa

Steps

Steam the broccoli over simmering water for 5 minutes, then drain, cool, and chop it finely.
Heat the oven to 425 F and oil a large baking sheet.
Mix the broccoli, quinoa, green onions, cheese, Italian seasoning, cayenne, salt, pepper, one egg, and one egg white in a bowl.
Shape the mixture into 24 small tots, then roll each one lightly in flour.
Beat the three remaining eggs in a shallow bowl and dip each tot into the beaten eggs.
