Ingredients
- 1 lb giant tiger shrimp
- 1 tbsp olive oil
- 1/4 cup buffalo sauce
- 4 cups kale
- 1 cucumber
- 1 tomato
- 1 stalk celery
- 1 1/2 cup mozzarella
- 2 tbsp ranch dressing
Steps
- Warm the olive oil in a large skillet over medium-high heat.
- Cook the shrimp for 3 minutes per side, until opaque and 145 F inside.
- Add the buffalo sauce and cook for 1 minute, turning the shrimp to coat them.
- Chop the kale, cucumber, tomato, and celery while the shrimp cooks.
- Toss the vegetables with the mozzarella and ranch dressing in a large bowl.
- Add the cooked shrimp and toss the salad together.
