Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup yellow cornmeal
- 1 tbsp baking powder
- 1 1/4 tsp salt
- 2 1/2 tbsp sugar
- 2 tsp finely chopped fresh thyme
- 3/4 cup frozen corn kernels
- 1 cup grated sharp cheddar cheese
- 1 1/4 cups milk
- 2 large eggs
- 1/2 cup unsalted butter
Steps
- Heat the oven to 400 F and butter a 9-by-13-inch baking pan.
- Melt the butter and let it cool slightly.
- Whisk the flour, cornmeal, baking powder, salt, sugar, and thyme in a large bowl.
- Whisk the milk, eggs, and melted butter in another bowl, then stir them into the dry mixture.
- Fold in the corn and cheddar, spread the batter in the pan, and bake for 30 minutes.
- Rest the cornbread for 5 minutes before cutting.
