Ingredients
- 1 cup all-purpose flour
- 2 tsp baking powder
- 3/4 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- 1/2 cup milk
- 1 tbsp butter
- 1 cup fresh cooked corn
- 2 tbsp butter
- 1 cup sour cream
- 1/4 cup green onion
Steps
- Whisk the flour, baking powder, salt, and pepper in a large bowl.
- Whisk the eggs and milk in another bowl, then stir in the cooked corn.
- Combine the wet and dry mixtures, then stir in 1 tablespoon melted butter.
- Melt the remaining butter in a large skillet over medium heat.
- Cook 16 small cakes for 2 to 3 minutes per side, adding butter as needed.
- Top the warm cakes with sour cream and green onion.
