Ingredients
- 2 overripe bananas
- 1/4 cup orange juice
- 2 large eggs
- 1/3 cup pure maple syrup
- 1/4 cup extra virgin olive oil or avocado
- 1 tsp vanilla extract
- 1 1/4 cups super fine almond flour
- 1 cup oat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp fine sea salt
- 1 tbsp orange zest
- 1/2 or 3/4 cup dried tart cherries
- 1/4 cup pistachios
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with cooking oil.
- Mash the bananas, then whisk in the orange juice, eggs, maple syrup, oil, and vanilla.
- Stir the almond flour, oat flour, baking soda, baking powder, salt, and orange zest into the wet mixture.
- Fold in the dried cherries and pistachios, then spread the batter in the loaf pan.
- Bake for 50 minutes, until the center is firm and a tester comes out clean.
