- 14 oz jar enchilada sauce
- 3 cups shredded monterey jack cheese
- 6 corn tortillas
- 2 chicken breasts
Steps
- Heat the oven to 375 F and cut the chicken breasts into small pieces.
- Spread a thin layer of enchilada sauce in a 9-by-9-inch baking dish.
- Layer three tortillas, half the chicken, half the remaining sauce, and half the cheese in the dish.
- Repeat the layers with the remaining tortillas, chicken, sauce, and cheese.
- Cover the dish and bake for 30 minutes, then uncover it and bake for 5 minutes more.
- Check that the chicken reaches 165 F before serving.
