Ingredients
- 1 1/4 lb whole chicken wings
- 1 cup maple syrup
- 2/3 cup chili sauce
- 2 tbsp lime juice
- 2 tbsp dijon mustard
- 1 cup all-purpose flour
- 2 tsp salt
- 2 tsp paprika
- 1/4 tsp pepper
- oil for deep-fat frying
- optional: thinly sliced green onions and lime wedges
Steps
- Whisk the maple syrup, chili sauce, lime juice, and mustard in a medium bowl.
- Mix the flour, salt, paprika, and pepper in a shallow dish, then coat the wings evenly.
- Heat 2 inches of frying oil to 350 F in a deep, heavy pot.
- Fry the wings in batches for 10 to 12 minutes, turning them once, until they reach 165 F.
- Drain the wings on a rack, toss them with the chili-lime sauce, and serve hot.
