Ingredients
- 5 cups milk
- 2 2/3 cups unsweetened dry shredded coconut
- 1 2/3 cups coconut milk
- 1 2/3 cups chicken stock
- 1 cup heavy cream
- 1/2 tsp salt
- 1/2 tsp white pepper
- 1 tsp sugar
- 1 bunch cilantro
Steps
- Combine the milk, shredded coconut, coconut milk, chicken stock, cream, salt, white pepper, and sugar in a large pot.
- Bring the mixture to a gentle simmer over medium heat, then cook for 15 minutes.
- Stir in the cilantro and simmer for 2 minutes.
- Cool the soup at room temperature for 10 minutes, then refrigerate it for 25 minutes.
- Stir the chilled soup well and remove the cilantro before serving.
