Ingredients
- 1/2 cup olive oil
- 2 tbsp red wine vinegar
- 1/2 cup parsley
- 1 small chile
- 3 1/2 cloves garlic
- 1 tsp dried oregano
- 1 tsp salt
- 1 lb jumbo shrimp
- 1/2 cup tzatziki (optional)
- 2 cups cherry tomatoes (optional)
- bread or rice for serving (optional)
Steps
- Stir the olive oil, vinegar, parsley, chile, garlic, oregano, and salt in a bowl.
- Heat 2 tablespoons of the chimichurri in a large skillet over medium-high heat for 1 minute.
- Cook the shrimp for 4 to 6 minutes, turning once, until opaque and 145 F.
- Toss the cooked shrimp with the remaining chimichurri and cherry tomatoes, if using.
- Serve with tzatziki and bread or rice, if using.
