- 1 lb ground turkey
- 1 1/2 tsp olive or avocado oil
- 2 shallots
- 1 chipotle chile pepper in adobo sauce
- 1 sweet potato
- 1 red bell pepper
- 1 tbsp chili powder
- 1 tbsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp smoked paprika
- 3/8 tsp cayenne pepper (optional)
- 1 tbsp tomato paste
- 1 cup crushed tomatoes
- 1 cup canned tomato sauce
- 1 cup vegetable broth
- salt and pepper to taste (optional)
- fresh diced jalapeño
- fresh cilantro
- sour cream or greek yogurt
- grated cheddar cheese
- minced red onion
- corn chips
- sliced or diced avocado
Steps
- Heat the oil in a 4-quart pot over medium heat, then cook diced shallots and bell pepper for 3 minutes.
- Add the ground turkey and cook for 5 minutes, breaking it apart until no pink remains.
- Stir in the chipotle chile, chili powder, cumin, oregano, smoked paprika, cayenne, tomato paste, salt, and pepper for 1 minute.
- Add the diced sweet potato, crushed tomatoes, tomato sauce, and broth, then bring the chili to a boil.
- Lower the heat, cover the pot, and simmer for 12 minutes until the sweet potato is tender and the turkey reaches 165 F.
- Top the chili with jalapeño, cilantro, sour cream or yogurt, cheddar, red onion, corn chips, and avocado.
