- 3/4 cup dark beer
- 1 jalapeño (optional)
- 1/3 cup evaporated milk
- 1 lb shredded medium cheddar cheese
- 2 tbsp diced canned green chiles
- tortilla chips or french fries for serving (optional)
Steps
- Cook the chorizo in a medium saucepan over medium heat for 8 minutes, breaking it into small pieces.
- Stir in the beer and jalapeño, then simmer for 10 minutes until slightly reduced.
- Lower the heat and stir in the evaporated milk and green chiles.
- Add the cheddar a handful at a time, stirring for 5 to 7 minutes until smooth.
- Cook ground meat until it reaches 160 F inside.
