- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup butter
- 1 1/2 cups white sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 tsp coconut extract (optional)
- zest of one large lime
- 3 tbsp lime juice
- 1/2 cup unsweetened toasted coconut
- 1/2 cup sugar for rolling cookies
Steps
- Heat the oven to 350°F and line two baking sheets with baking paper.
- Whisk the flour, baking soda, baking powder, and salt in a medium bowl.
- Beat the butter and 1 1/2 cups sugar in a large bowl until smooth, then beat in the egg, extracts, lime zest, and lime juice.
- Stir in the dry ingredients and toasted coconut until a soft dough forms.
- Shape the dough into 24 balls, roll them in the remaining sugar, and place them on the baking sheets.
- Bake for 10 to 12 minutes, then cool the cookies on the sheets for 5 minutes.
